Nigerian Cauliflower Fufu
Nigerian cauliflower fufu is a swallow made from cauliflower instead of yam or cassava, and it is high in fibre. The trick is squeezing the blended cauliflower dry in a cloth, then stirring in psyllium husk, which binds it into a paste you can mold by hand. The result is similar to pounded yam, and it takes about 25 minutes from start to finish.
Instructions
Cut the cauliflower into small pieces and blend them in a blender until you have a smooth purée.
Pour the purée into a clean cloth and strain it, keeping the solids and discarding the liquid.
Gather the cloth and squeeze it firmly to press out more water. Keep squeezing until the cauliflower is fairly dry and holds together as a dough.
Transfer the dough to a saucepan set over medium heat and stir in the psyllium husk.
Keep stirring and pressing the mixture until it comes together as a smooth, moldable paste. Shape it into portions for serving.
