Nigerian Macaroni Jollof

Nigerian macaroni jollof is a tomato-based pasta dish that is often made for children. It borrows the name and seasoning habits of jollof rice, but swaps in macaroni, which soaks up a sauce built on tomatoes, onion, thyme, and Nigerian curry powder. Ground crayfish and red peppers add a savory, slightly smoky depth that plain tomato sauce lacks. It comes together in one pot and one pan.
Instructions
Bring a pot of water to a boil, add the macaroni, and cook until the pasta is tender. Drain it and set it aside.
Grind the crayfish and red peppers together until they form a rough paste.
Heat a thin layer of vegetable oil in a pan. Add the chopped onion and cook until it softens, then stir in the chopped tomatoes and cook for a few minutes.
Season the tomato mixture with thyme, salt, and Nigerian curry powder, and let it simmer briefly so the flavors come together.
Stir in the cooked macaroni and the chopped spring onion until the pasta is evenly coated. Serve hot.
