Oatmeal Banana Waffle

This oatmeal banana waffle turns a pot of plain oats into a crisp-edged breakfast using nothing more than a blender and a waffle iron. The oats are blended with water into a smooth batter, with half a banana for mild sweetness and olive oil in place of butter. A short rest lets the batter thicken before cooking. It needs no flour and no eggs, and the ingredients are all pantry staples.

Instructions

Turn the waffle iron on to its highest setting so it is fully hot by the time the batter is ready.

Put the oatmeal, water, banana, powdered milk, olive oil and salt in a blender. Blend on high until the mixture is completely smooth.

Leave the batter to sit for 10 to 15 minutes. This gives the oats time to absorb the liquid and thicken a little.

Spray the waffle iron with non-stick cooking spray. Pour on some of the batter and close the lid.

Cook for about 10 minutes. Lift out the waffle, then repeat with the remaining batter until it is all used.
