Okra Plantain Porridge
Okra plantain porridge is a Nigerian one-pot dish built on unripe plantain, okra and fish. The plantain is simmered until soft and breaks down into a thick, starchy base, while grated okra adds its natural body so no flour or other thickener is needed. Palm oil gives the pot its color and savory depth, and ugu leaves add a green, slightly bitter note. It comes together quickly in a single pot.
Instructions
Peel the unripe plantains and dice them. Put them in a pot, cover with water, and simmer for a few minutes.
Add the fish, the stock cube and the sliced onions to the pot.
Stir in the palm oil, the grated okra and the rinsed, chopped ugu leaves. Keep stirring until the mixture comes together as a porridge.
Cook for a few more minutes. Season with salt and pepper to taste, then serve hot.
