Pattaya Fried Rice (Nasi Goreng Pattaya)

Pattaya fried rice is a Malaysian dish of chicken fried rice sealed inside a thin omelette, much like Japanese omurice. The rice is seasoned with fish sauce and tomato sauce, which gives it a salty, slightly sweet base, while fresh red chilli adds heat against the sweet peas and carrot. The egg wrapper keeps the rice hot and makes a plain plate look finished with little extra effort.
Instructions
Heat 2 tablespoons of the oil in a non-stick pan until hot. Fry the garlic and shallots, stirring, until they turn brown and smell fragrant.
Add the chicken, carrot, green peas and red chilli, and stir for 2 minutes.
Tip in the cooked rice, then add the nam pla, tomato sauce, salt and pepper. Stir until the rice is evenly coated and everything is mixed through.
Heat the remaining tablespoon of oil in a separate pan. Beat the eggs, pour them in, and cook until the underside is browned.
Flip the omelette and cook the other side briefly.
Spoon a ball of the fried rice onto the center of the omelette and fold the four edges up over it to enclose the rice. Turn the pouch over onto a serving plate and serve hot.
