Plantain Frittata is a Nigerian breakfast of set eggs topped with fried plantain and strips of red bell pepper. The plantain is fried first, so it keeps its golden edges and sweetness against the curry, thyme and onion in the egg. Cooked slowly under a lid, it turns out like a thick savory pie, which is why some cooks call it Nigerian pizza. It can be made ahead.

Instructions

Peel the plantain and cut it into pieces of whatever shape and size you like. Pan fry the pieces in hot oil until golden brown, then lift them out of the oil and set them aside.

Heat a few tablespoons of oil in a skillet and add the chopped onion and minced garlic. Sauté for 1 minute, then season with salt, stock cube, pepper, thyme and curry powder. Take the pan off the heat and let the onions cool slightly.

Beat the eggs in a bowl and stir in the seasoned onions. Heat a clean skillet and grease it with oil or melted butter, then pour in the egg mixture in an even layer. Scatter the fried plantain and the red bell pepper strips over the top.

Cover the pan and cook on low heat for 20 minutes, until the egg starts to set and holds together as a cake. When the top has dried, turn off the heat and serve hot.
