The Reuben is a grilled sandwich of corned beef, sauerkraut, Swiss cheese and Russian dressing on rye bread. Its balance is the appeal: salty, rich beef and melted cheese are cut by tangy sauerkraut, and this version adds chopped sweet onion and parsley to the kraut for a fresher bite. Butter on the outside gives a crisp, browned crust. Pastrami works well if you prefer it to corned beef.

Instructions

Stir the drained sauerkraut together with the chopped sweet onion and the parsley in a small bowl. This mixture gives the sandwich its sharp, fresh filling.

Spread the Russian dressing over one side of each slice of bread.

On one slice, pile the corned beef in layers with the Swiss cheese and the sauerkraut mixture. Top with the second slice, dressing side down.

Butter the outside of the sandwich on both faces. Cook it on a griddle or in a pan, turning once, for roughly 5 to 10 minutes. It is ready when the bread is lightly browned on both sides.
