Rosti is a Swiss potato patty fried until crisp on the outside, and this version needs only one potato and a spoonful of oil. It began as a farmer's breakfast in the canton of Bern and is now served across Switzerland, usually beside other dishes. The key is squeezing the grated potato as dry as you can, because dry shreds fry to a crackling crust.

Instructions

Grate the potato into a dish, washed or peeled as you prefer. Squeeze the grated potato firmly with your hands and pour away the liquid that comes out.

Divide the grated potato into two even piles.

Pour the oil into a frying pan and heat it over a moderate heat.

Set the two piles in the pan, well apart, and press down on each with a spatula so they hold together as patties.

Fry until the underside is golden brown, then flip each patty with care and cook the second side the same way.

Season with salt and pepper to taste and serve while hot.
