Sausage Sizzle

The sausage sizzle is Australia's simplest community meal: a charred snag folded into a plain slice of white bread. It is the classic fundraiser food outside hardware stores and at school fetes in Australia and New Zealand. The bread is a wrapper, not a bun, which keeps costs low and cleanup easy. Grilled onions and a squirt of tomato sauce finish it, and a eucalyptus wood fire adds a distinct smoky edge.

Instructions

Cook the sausages over a grill or open fire until the skins are partly blackened. A eucalyptus wood fire is the traditional choice and gives the best result.

If you want onions, cook the sliced onions on the grill too, with a little oil or butter so they do not stick.

Lay a slice of bread flat and place a sausage across it on the diagonal. Wrap the bread around the sausage so it is held in place.

Top with the grilled onions and tomato sauce to taste, then eat it by hand while it is hot.
