Seafood Fried Rice
This seafood fried rice packs bacon, prawn, fishball and chicken into one pan and finishes in about 20 minutes. Garlic goes in first and cooks for only 20 seconds, so it perfumes the oil without turning bitter. Minced jalapeño adds a clean, green heat that suits the salty bacon and soy. Cool cucumber, tomato and pickles on the plate give a crisp contrast to the rich rice, and the recipe feeds five.
Instructions
Warm the oil in a non-stick pan. Add the garlic and fry for about 20 seconds, until it smells fragrant.
Add the bacon, prawn, fishball and chicken. Stir-fry them until the meats and seafood have changed color.
Tip in the rice, then add the bean sprouts and spring onion, and toss everything together in the pan.
Season with the salt, pepper, minced jalapeño and soy sauce, mixing until the seasoning is spread evenly through the rice.
Serve the rice with the dressing, along with the sliced cucumber and tomato and a few pickles on the side.
