Seitan Burger
Seitan burgers are a meat-free patty made from gluten flour, with a dense, sliceable bite. The contributor compares the texture to a fillet, which is why a crisp breading suits it so well. Season the crumbs the way you would for schnitzel, with cumin, oregano and savory, then pan-fry in a thin film of oil. The dough takes only a few minutes to knead and needs no special equipment.
Instructions
Stir the water and soy sauce together in a bowl until evenly mixed.
In a second bowl, mix the gluten flour with the salt and any spices you want, such as garlic powder.
Pour the wet mixture into the dry one and knead until the dough is smooth.
If you are using onions, work the chopped onions into the dough now.
Shape the dough into patties of even thickness.
Mix the breadcrumbs with salt, pepper, cumin, oregano and savory. Press each patty into the mixture so every side is coated.
Fry the patties in an oiled pan, using only enough oil for the breading to pick up some on both sides. Turn them once so each side is browned and crisp.
