Semolina Burger
Semolina Burger is a meatless patty built from semolina and oat flakes, fried in a seasoned crust. The semolina sets into a firm, sliceable dough once mixed with water, so no egg or binder is needed. Most of the spice goes into the breading, where it hits the pan directly and browns. Cornstarch loosens the texture, while a 1:1 grain ratio makes the patties denser and more compact.
Instructions
Mix the semolina and oat flakes at a weight ratio of 4:1. Stir in water until you have a thick, viscous dough.
Cut the onions into pieces and fry them in a little oil. When they turn glassy, add the maize and paprika to taste if you are using them, then mix everything into the dough.
Shape the dough into patties.
Combine the breadcrumbs, salt, pepper, and any cumin, oregano and savory you like to make the breading mixture. Spread it on a plate.
Press each patty into the breading so both sides are coated, then shake off the excess.
Fry the patties in a hot, oiled pan, pressing them down with a spatula so they sear well. Use just enough oil that the breading fries without the patties soaking up fat, and shuffle them around the pan as they cook.
The patties firm up quickly. Once they hold together, lift one with the spatula to check the underside has browned, then turn them to finish the other side.
