Sesame Shrimp Toast
Sesame shrimp toast is a crisp, savory bite made by pressing a shrimp paste onto small squares of plain sandwich bread. Chopping the shrimp very fine and binding it with egg and cornstarch keeps the topping in one piece in the hot oil. The sesame seeds toast as the bread fries, giving a nutty crunch. Each batch cooks in a few minutes, so it suits a party platter.
Instructions
Peel the shrimp and pull off the tails. Cut along the back of each one with a sharp knife, lift out the dark vein, then chop the shrimp into a very small dice.
In a small bowl, beat 1 egg with the cornstarch, salt, pepper and chopped green onion until smooth. Add the diced shrimp and toss until every piece is coated.
Trim the crusts from the bread and cut each slice into quarters. Spoon some of the shrimp mixture onto each piece and press it down gently so it sticks.
Brush or rub a little of the leftover egg mixture over the top of each piece. Spread the sesame seeds on a plate and press the moist side of each piece into them.
Heat the oil in a skillet over medium-high heat until it reaches 375°F (190°C). Fry 3 to 4 pieces at a time for 1 to 2 minutes per side, until golden, then lift them out and drain on paper towels.
