Shashlik (Russian Skewered Meat)

Shashlik is pork shoulder marinated in vodka, honey and mustard, then grilled on skewers with vegetables and sausage. The dish came to Russia from the Caucasus, where mutton is the usual meat, and Russians made it their own picnic food with pork and a splash of vodka. The marinade tenderizes the fatty shoulder while the honey helps it brown over the fire. Three hours in the fridge is all it needs.
Instructions
Cut the pork shoulder into pieces suitable for skewering. Stir the honey, mustard, vodka, black pepper and salt together in a deep bowl.
Add the meat to the bowl and turn it until every piece is coated. Cover the bowl and leave it in the refrigerator for 3 hours.
Thread the marinated meat onto wooden or metal skewers. Place pieces of bacon, sausage, bell pepper, onion, mushrooms or cucumber between the meat, choosing whichever you like.
Grill the skewers over an open fire or grill until the meat is cooked through and browned at the edges.
Serve the skewers hot, with potato salad or other salads on the side.
