Sinasir (Nigerian Rice Pancake)

Sinasir is a rice pancake from northern Nigeria, made from a fermented batter of short-grain rice. The rice is used in two forms, soaked raw and parboiled, then blended smooth, which gives the pancake a soft, tender crumb. Yeast and a few hours of resting add a gentle tang, and chopped onion in the batter seasons every bite. It is a good way to use the same rice served with tuwo shinkafa.
Instructions
Put the uncooked rice in a bowl, cover it with water, and leave it to soak for several hours.
Tip the soaked rice into a blender with the parboiled rice. Blend until the batter is completely smooth, adding water a little at a time as needed to keep it moving.
Pour the batter into a bowl and stir in the yeast and sugar. Cover the bowl and leave it at room temperature for a few hours to ferment.
Stir the chopped onion, salt, and baking powder, if you are using it, into the fermented batter.
Heat a non-stick frying pan and brush it with a thin layer of vegetable oil.
Pour in just enough batter to cover the base of the pan in a thin layer. Cook until the underside is browned and the pancake is cooked through.
Lift the pancake out of the pan. Grease the pan again and repeat with the rest of the batter.
