Smoky Chipotle Glazed Hot Wings
Smoky chipotle hot wings with a butter and garlic glaze make a simple, hot-sauce-forward take on the bar classic. The sauce is only four ingredients, with a little soy sauce adding savory depth beneath the chipotle heat. Frying the wings first and tossing them in the glaze afterward keeps the skin crisp under a glossy coat. Draining them on a rack, not paper, stops the undersides from steaming soft.
Instructions
Pour enough oil into a deep, heavy pot for deep frying and heat it to 350°F. Use a thermometer so the temperature stays steady while you cook.
Fry the wingettes in batches for 12 minutes per batch, without crowding the pot. Lift each batch out and let it drain on a rack.
In a large bowl, stir together the soy sauce, chipotle hot sauce, melted butter and minced garlic until evenly mixed.
Add the drained wings to the bowl and toss until every piece is coated in the glaze. Serve straight away while the wings are hot.
