Smoky Tuna Melts
Smoky Tuna Melts are a quick hot sandwich built on hickory-smoked albacore. The tuna is already smoky from the tin, and a second smoked ingredient, the mozzarella, echoes it as it melts under the broiler. Melted butter binds the fish instead of mayonnaise, and a little lemon juice cuts through the richness. With only five ingredients and a short broil, it works well for a fast lunch.
Instructions
Put the tuna in a bowl with the melted butter and the juice from the lemon wedge. Stir until the butter and lemon are evenly mixed through the fish.
Spread some of the tuna mixture over each of the 4 slices of white bread. Lay a slice of smoked mozzarella over the tuna on 2 of them, as the recipe lists 2 slices of cheese.
Place the bread under the broiler. Cook until the cheese has melted, then remove and serve.
