Spicy Apple Glazed Ribs
Spicy apple glazed ribs are slow-smoked spareribs finished with a sticky, boiled-down cider glaze. The glaze is the draw here: apple cider, cider vinegar, honey, soy sauce and Worcestershire simmer into a tangy, salty-sweet coating that cuts through the richness of the pork. Cooking low and slow gives tender meat, and a last pass over a hotter grill caramelizes the brushed-on layers. Extra glaze goes on the table for dipping.
Instructions
Coat the spareribs all over with the barbecue rub. Refrigerate them for at least 1 hour so the seasoning can settle into the meat.
Pour the apple cider, cider vinegar, Worcestershire sauce, honey and soy sauce into a pot and bring to a boil over high heat. Let it boil for 5 to 10 minutes, then set the glaze aside.
Put the ribs in a smoker held at 250°F, or in a charcoal grill at 250°F set up for indirect heat. Cook them for 5 to 6 hours, until the meat falls off the bone.
Brush the ribs generously with the cider mixture and move them to a medium-high grill. Turn and brush them again and again until they are well browned.
Take the ribs off the grill and let them rest for 10 minutes. Serve them with the remaining cider mixture on the side for dipping.
