Spicy Chilli Chicken
Spicy Chilli Chicken is a Kerala-style chicken dish that gets its sharpness from a long lemon juice marinade. The chicken is browned first, then simmered in a sauce of tomatoes, ginger, garlic and spices. Ketchup and soy sauce add sweetness and depth, a mix common in Indian-Chinese cooking, while fresh green chiles and bell peppers keep the heat bright. Spoon it over plain steamed rice to soak up the sauce.
Instructions
Put the chicken in a bowl with the lemon juice, masala and salt. Turn it to coat, then leave it to marinate for 1 hour.
Heat the canola oil in a large pot and fry the marinated chicken until it is golden brown, about 5 to 7 minutes. Lift the chicken out and cut it into pieces.
Leave the oil in the pot and add the onions, red chile powder, turmeric, smoked paprika and coriander. Sauté until the onions have wilted.
Stir in the tomatoes, ginger and garlic. Cook until the tomatoes are soft and starting to fall apart.
Add the ketchup, soy sauce, chicken pieces, green chiles and bell peppers. Simmer until the peppers are soft and the chicken is cooked through.
Serve the chicken over steamed rice.
