Tex-Mex Sliders
Tex-Mex Sliders are sixteen small chipotle-spiced beef burgers made from a single pound of meat. Rolling the chuck flat on a sheet pan and cutting it with a pizza cutter gives you patties of identical size that cook through in a minute per side on a griddle. Smoky chipotle powder and cumin season the beef, and Monterey Jack melts over the top. They suit a crowd and disappear quickly.
Instructions
Preheat an electric griddle to 350°F. Stir the cumin, garlic powder, salt, pepper and chipotle powder together in a small bowl and set it aside.
Set the ground chuck on a parchment-lined sheet pan and cover it with plastic wrap. Roll it out with a rolling pin until the meat fills the pan in an even layer.
Lift the whole sheet of parchment, meat included, out of the pan. Use a pizza cutter to cut the meat into 16 equal patties.
Sprinkle the seasoning mixture over both sides of each patty. Cook the patties on the hot griddle for 1 minute per side, laying a piece of cheese on each patty's cooked side right after you flip it. Cut the 4 cheese slices to cover all 16 patties.
While the patties cook, spread butter on the buns. Put a patty in each bun, close it, and serve warm with whatever condiments you like.
