Thai drumsticks

Thai drumsticks achieve their characteristic glaze through a balance of heat and sweetness that reflects the Thai principle of complementary flavors. The addition of fresh orange juice brightens the curry paste and sweet chilli sauce, cutting through richness while the citric acid tenderizes the chicken from within. This technique, common in Southeast Asian cooking, delivers complexity from just a handful of ingredients, making it reliable for weeknight cooking without sacrificing authentic depth.
