Wakeup Sausage Casserole

Wakeup Sausage Casserole is a make-ahead breakfast bake that feeds ten from a single 9 x 13-inch dish. Stale French or Italian bread is the key, since dry cubes soak up the egg and evaporated milk without turning to paste. Hot pork sausage, dry mustard and a little garlic and onion powder give it a savory edge, and you can assemble it the night before and bake it in the morning.
Instructions
Heat the oven to 350°F and grease a 9 x 13-inch baking dish.
Spread the bread cubes in an even layer across the bottom of the dish.
In a bowl, mix the beaten eggs with the garlic powder, sliced green onion tops, evaporated milk, onion powder and dry mustard until evenly combined.
Pour the egg mixture over the bread cubes, then scatter the cooked, crumbled sausage evenly over the top.
Sprinkle the cheddar and the chopped red pepper over the casserole. The pepper is optional, so leave it off if you prefer.
If you are making it ahead, cover the dish and refrigerate it until you are ready to bake.
Bake for about 45 minutes, until the custard is set and no longer liquid in the center.
Serve warm. If you want a firmer or softer texture, try 10 eggs with 2.5 cups of milk next time.
