Zitumbuwa (Malawian Banana Pancakes)

Zitumbuwa are Malawian banana pancakes made from a simple batter that comes together in two bowls and one pan. The mashed ripe bananas do double duty, sweetening the batter and keeping the pancakes soft and tender, so very little sugar is needed. They suit a quick breakfast or a snack, and you can top them with honey, syrup, fruit, peanut butter or chocolate spread.

Instructions

Put the mashed bananas, flour, sugar, baking powder and salt in a mixing bowl and stir until evenly combined.

In a second bowl, whisk the milk, egg and vanilla extract together until the egg is fully blended in.

Pour the wet mixture into the banana and flour mixture a little at a time, stirring as you go. Keep mixing until the batter is smooth.

Warm the vegetable oil in a frying pan or on a griddle over medium heat. Spoon in a small amount of batter and spread it into a rough circle.

Cook for about 2 minutes, until bubbles appear on the surface. Flip the pancake and cook for another 1 to 2 minutes, until golden brown and cooked through.

Repeat with the rest of the batter, adding a little more oil whenever the pan looks dry so the pancakes do not stick.

Serve warm, plain or topped with honey, syrup or fresh fruit. For a stronger banana taste, lay a few banana slices on each pancake before flipping it.
