Adun is a Yoruba cornmeal dish that gets its color and richness from palm oil and its heat from dried ground chile. The Yoruba name refers to its sweetness, which comes from the corn itself. It needs no cooking beyond mixing, so the quality of the finely ground whole cornmeal matters most. Traditionally the meal is made by sun drying corn and grinding it. Serve it with garri, pap or Nigerian custard.

Instructions

Put the cornmeal in a large bowl and add the palm oil, groundnut, ground chile pepper and salt. Season with salt to your own taste.

Mix everything thoroughly with a spoon or your hands until the ingredients come together into a thick paste with no dry pockets of cornmeal.

Spoon portions of the paste into wrapping leaves and fold the leaves around it so the mixture holds its shape.

Serve the wrapped adun with garri, pap or Nigerian custard.
