Baked Leeks (Tavë me Presh)

Tavë me presh is an Albanian baked dish that gives leeks the main role instead of treating them as a background onion. The leeks are sautéed first, then baked under a tomato-spiked mix of onion and ground meat, so they turn soft and sweet while soaking up the savory juices. It needs only a handful of pantry ingredients and one baking pan.

Instructions

Cut the green leaves off the leeks, then wash the white and pale parts well. Slice them diagonally into pieces about 1 inch thick.

Heat a little of the oil in a pan and sauté the leeks. Move them to a baking pan when they have softened slightly.

Add the remaining oil to the pan and sauté the chopped onion and ground meat together until the meat is no longer raw.

Add the tomato sauce, red pepper, salt and pepper, along with the beef stock the contributor lists in the method. Bring the mixture to a boil.

Pour the meat mixture over the leeks in the baking pan. Bake for 1 hour at 375°F (190°C), then serve hot.
