Chicken Cacciatore
This slow cooker chicken cacciatore braises skinless chicken in a tomato sauce built from canned tomatoes, tomato paste and mushrooms. The onions go in first, so they soften under the chicken as it cooks. Oregano, basil and a bay leaf give the sauce its Italian character, while a little sugar tempers the acidity of the tomatoes. Wine is optional, since chicken broth or alcohol-free white wine works equally well. Everything goes in one pot with almost no prep.
Instructions
Put the chopped onion in the bottom of a 3 ½ quart (3.5 L) slow cooker and lay the skinless chicken pieces on top.
In a bowl, stir together the canned tomatoes with their juice, the tomato paste, the drained mushrooms, the bay leaf, the salt, pepper, garlic powder, oregano, basil, wine or broth, gravy browner and sugar.
Pour the tomato mixture over the chicken, spooning it so that every piece is covered.
Put the lid on and cook on low for 6 to 8 hours, or on high for 3 to 4 hours. The chicken should be tender and the sauce should have darkened and thickened slightly.
Fish out the bay leaf and discard it, then serve the chicken with plenty of the sauce.
