Chipotle Lime Grilled Chicken

Chipotle Lime Grilled Chicken is a charcoal-grilled chicken breast with a smoky, sweet and sour marinade. Lime juice and hot sauce season the meat during a short 45 minute soak, while honey helps the surface brown over the coals. A coat of chipotle rub goes on just before grilling, so the crust stays bold. Turning the breasts often keeps them from scorching, and a five minute rest keeps them juicy.

Instructions

Pour the olive oil, chipotle hot sauce, lime juice and honey into a gallon zip-top freezer bag. Seal and shake or squeeze the bag until the marinade is mixed.

Add the chicken breasts to the bag, press out the air and seal it. Refrigerate the chicken for 45 minutes.

Lift the chicken out of the bag and discard the marinade. Coat each breast on all sides with the Chipotle BBQ Rub.

Place the breasts on a preheated charcoal grill. Cook them, turning often, until a thermometer pushed into the thickest part reads 165°F.

Transfer the chicken to a plate and let it rest for 5 minutes before serving.
