Ekuru (White Bean Pudding)

Ekuru is a Yoruba steamed pudding made from nothing more than white beans, water and a little salt. The beans are peeled, blended and then beaten for 20 minutes, which traps air and gives the pudding its soft, set texture. It is also known as ofuloju or white moin moin, and it is rich in protein and fibre. Serve it with a spicy stew.

Instructions

Soak the beans in cold water for about 10 minutes to loosen the skins, then rub off the skins and discard them. Older or drier beans may need a longer soak before the skins slip off easily.

Blend the peeled beans into a smooth paste. Beat the paste thoroughly for 20 minutes to work some air into it, adding water as needed until it is neither too thick nor too thin.

Season the mixture with salt to taste. Spoon it into leaves shaped into cones, or into another mold such as small nylon bags or cupcake tins, then wrap and seal each portion well.

Bring a few inches of water to a boil in a pot and set a steamer basket or other platform inside so the parcels sit above the water. Add the wrapped ekuru, cover, and steam for 45 minutes. Keep an eye on the water level so the pot does not boil dry, and if the water boils up, add a drop of red oil.

Unwrap or unmold the ekuru and serve it with stew.
