Ifisashi n'ubwoko is a Rwandan stew of spinach and mushrooms in a thick peanut sauce. It needs only nine ingredients and one pot, and the peanut butter does the work of both thickener and seasoning base, coating the greens in a rich, nutty sauce. The mushrooms add a savory, earthy note that suits the spinach well. It is meat-free, easy to scale, and made to be spooned over rice or ugali.

Instructions

Heat the oil in a large pot over medium heat. Add the onion and garlic and cook until the onion turns translucent and smells fragrant.

Stir in the sliced mushrooms and cook for a few minutes, until they start to soften.

Add the chopped spinach and stir it through the mushrooms and onion so everything is mixed.

Whisk the peanut butter and water together in a separate bowl until smooth, then pour it into the pot. Stir until the sauce coats the spinach and mushrooms evenly.

Season with salt and black pepper, and stir well to spread the seasoning through the stew.

Turn the heat to low and simmer for about 15 to 20 minutes, until the spinach has wilted and the flavors have come together. Taste and adjust the seasoning if needed.

Transfer the stew to a serving dish and serve hot with steamed rice or ugali.
