Meshayi (Nigerian Egg Sandwich)
Meshayi is a Nigerian street sandwich from the north of the country, now sold well beyond it. Its appeal is in the layers: a curry and thyme scented egg and vegetable filling sits against smoky pieces of suya, all inside soft bread. The finishing step matters most. Frying the closed sandwich in oil crisps the outside to golden brown while the inside stays tender, so it eats like a hot, pressed parcel.
Instructions
Break the eggs into a bowl and beat them until the yolks and whites are fully combined.
Stir in the sliced peppers, onions and cabbage, then season with curry powder, dried thyme and salt.
Heat a little oil in a pan and pour in the egg mixture. Cook until the egg is set all the way through, then take the pan off the heat.
Split the loaf in half lengthwise. Pile the cooked egg onto one half and lay pieces of suya on the other.
Press the two halves together to close the sandwich.
Heat some vegetable oil in a frying pan and fry the sandwich on both sides until it turns golden brown. Serve it right away.
