Nigerian Beans and Plantain
Nigerian beans and plantain is a simple lunch of stewed beans served with fried plantain slices. The beans simmer with onion, dried pepper and a seasoning cube, then get a stir of palm oil at the end, which gives the pot its rich color and a distinct earthy flavor. The fried plantain adds a sweet, crisp contrast to the soft, savory beans. It takes about 45 minutes.
Instructions
Rinse the beans well under cold water, then put them in a pot with the chopped onion, the seasoning cube, the dried pepper, the salt and enough water to cover.
Bring the pot to a boil and keep cooking until the beans are soft enough to crush easily between your fingers.
Stir in the palm oil and let the beans simmer for a few more minutes so the oil blends into the broth.
Heat oil in a separate pan and fry the sliced plantain until it is cooked through and browned on the outside.
Serve the beans with the fried plantain alongside.
