Nigerian lentil porridge is a simple pot of tender lentils finished with palm oil, pepper and onion. The palm oil is what sets it apart, giving the porridge a deep orange color and a rich, slightly earthy flavor that plain boiled lentils lack. The blended pepper adds heat, and the onion cooks down quickly at the end. It uses six ingredients and one pot, so it suits an easy weeknight meal.

Instructions

Pick through the lentils and discard any debris or dirt, then rinse them well under running water.

Put the lentils in a pot and pour in enough water to cover them. Bring the water to a boil, then lower the heat and let the lentils simmer until they are tender and easily crushed between your fingers.

Stir in the palm oil, the blended pepper and the chopped onion. Cook for a few minutes so the onion softens and the oil colors the porridge.

Season with salt to taste, then serve the porridge hot.
