Potato Meat Loaf

Potato meat loaf is a one-dish dinner that bakes the side dish underneath the meat. Sliced potatoes and onion form the base, and a spiced beef and sausage loaf is pressed on top with a well in the center for cheddar cheese soup. As it bakes, the soup melts into a sauce and the meat juices season the potatoes below. Cut straight down and every serving gets all four layers.

Instructions

Heat the oven to 350°F. Layer the sliced potatoes across the bottom of a baking dish, then scatter the sliced onion over them.

In a bowl, combine the ground beef, sausage, beaten egg, crumbled soda crackers, chili powder, salt and pepper. Mix well so the crackers and seasoning are evenly spread through the meat. Leave the cheddar cheese soup out for now.

Press the meat mixture over the onions and potatoes in the dish. Shape a shallow indentation in the middle of the meat.

Pour the cheddar cheese soup into the indentation. Bake at 350°F for 1 hour.

Let the dish stand for 5 minutes before serving. To serve, cut straight down with a metal spatula so each portion includes potato, onion, meat and cheese.
