Sindhi Spiced Moong Dal

Sindhi spiced moong dal is a plain, quick pot of lentils that gets all its heat from green chiles, ginger and a full tablespoon of pepper. The dal is soaked for an hour, then pressure cooked with the chiles and ginger but no salt, which is added only afterward at the table-ready stage. A final dusting of chile powder and a drizzle of oil finish it simply.

Instructions

Put the dal in a bowl, cover it with water and leave it to soak for 1 hour. Drain it well afterward.

Tip the drained dal into a pressure cooker pot with the green chiles and the ginger. Leave out the salt at this stage.

Pour in enough water to cover the dal. Close the cooker and cook under pressure for at least 3 to 4 minutes, until the dal is soft.

Spoon the cooked dal into a serving bowl. Season it with salt, the coriander powder and the ground pepper, and stir to mix.

Sprinkle the red chile powder over the top and drizzle with a little oil before serving.
