Tofu Bacon
Tofu bacon is a quick way to get salty, smoky strips on the plate without any meat. Extra-firm tofu holds its shape in the pan and crisps at the edges, while soy sauce gives the seasoning and nutritional yeast adds a savory, slightly cheesy coating. A drop or two of liquid smoke brings the bacon flavor closer. Use it in a B.L.T. or alongside breakfast.
Instructions
Cut the tofu into thin strips, about the shape and thickness of bacon rashers.
Heat the vegetable oil in a frying pan over medium heat and lay in the tofu strips. Fry them, turning once, until both sides are crisp and golden brown.
Sprinkle the soy sauce or tamari over the strips, adding one to two drops of liquid smoke if you are using it. Toss gently so every strip is coated.
Scatter the nutritional yeast flakes over the tofu and turn the strips until they are evenly covered. Take the pan off the heat and serve.
