Brown Rice with Other Starches and Vegetables (Pandora's Feast)

Pandora's Feast is a whole vegan meal cooked in one rice cooker, with grain, beans, root vegetables and greens all done in a single pot. The kale goes in at the end so it only wilts in the steam. Swap the beans or vegetables as you like, and replace about a tenth of the rice with black rice for a purple result. Oil, nutritional yeast, soy sauce and sesame finish it.

Instructions

Put the brown rice and water into a rice cooker. Cut the potato, sweet potato, squash and beet into cubes about 1cm on each side so they cook through in the same time as the rice.

Drain and rinse the beans, then add them to the cooker. Beans must be pre-soaked and boiled or taken from a can, and dried kidney beans need a hard boil of at least 20 minutes before they go in.

Stir in the minced garlic if you are using it. Add whichever of the potato, sweet potato, squash and beet you want to use.

Turn the cooker on. If it is a programmable fuzzy logic model, choose the brown rice setting. A simple on/off cooker only needs to be switched on.

The rice should finish in about 20 to 40 minutes. When the cooker is done, open the lid, add the chopped kale, close the lid and leave it for another minute or two so the kale wilts in the steam.

Open the cooker and serve. Top each portion with oil, nutritional yeast, soy sauce and black sesame seeds, as many or as few as you like.
