Ful Medames (Egyptian Fava Beans)

Ful medames is Egypt's everyday bean dish, and this version needs only a handful of pantry ingredients. Dried fava beans simmer slowly until tender, then take on garlic, lemon juice, cumin and a generous pour of olive oil. The result is hearty, tangy and filling. Eat it for breakfast with warm pita, then add tomatoes, onion, pickles or boiled eggs to suit your taste.
Instructions
Rinse the dried fava beans under cold running water and pick out any grit or damaged beans. Put them in a saucepan and cover with the water.
Bring the pot to a boil over medium-high heat, then turn the heat down to low. Simmer for about 1 to 1.5 hours, checking now and then and topping up with water if the level drops, until the beans are completely tender.
Drain the beans in a colander and tip them back into the saucepan.
Add the garlic, olive oil, lemon juice, cumin, salt and black pepper. Stir well and leave the pan over low heat for a few minutes so the beans take up the seasoning.
Transfer the beans to a serving dish and scatter the chopped parsley or cilantro over the top. Serve warm with pita or another bread.
If you like, finish with chopped tomatoes, diced onion, pickled vegetables, hard-boiled eggs, more olive oil or a pinch of chile powder.
