Simmering Tofu Stir-fry
This simmering tofu stir-fry is a quick one-pan dinner that needs only a handful of ingredients and no special equipment. Cooking the tofu in a thin bath of olive oil and soy sauce lets it brown while the vegetables soak up the juices. Slices of apple melt into the pan and add a gentle sweetness against the salty soy and any hot sauce you stir in.
Instructions
Cut the tofu into slices no thicker than ¼ inch, so each piece can brown and take up the sauce.
Slice the vegetables and the apple. Onion, green pepper and tomato work well together, but use whatever mix you prefer.
Put the tofu, vegetables and apple in a pan with a light mixture of olive oil and soy sauce. Set the heat to medium high and let everything simmer.
Keep cooking until the tofu is golden brown and the vegetables have absorbed nearly all of the liquid in the pan.
Serve with rice or couscous on the side, and season to taste with pepper, hot sauce or salt.
