Stuffed Grilled Chicken Breasts
Stuffed grilled chicken breasts put a savory poultry stuffing inside the meat, so each slice comes with its own filling. Piping the stuffing from a zip-top bag with a snipped corner makes filling a narrow pocket quick and tidy. A mustard brush seals the opening and helps the grill seasoning cling. Turning the breasts often over charcoal keeps the outside from scorching before the center is cooked through.
Instructions
With a narrow boning knife, cut a pocket into the side of each chicken breast, going almost but not quite through to the other side.
Spoon the prepared stuffing into a gallon-size zip-top bag and snip a small hole in one bottom corner. Squeeze the stuffing into each pocket until it is about half full, then brush Dijon mustard along the edges of the opening and press them lightly together.
Coat the outside of the chicken with more mustard, then season generously with the Grill Seasoning and massage it into the meat.
Preheat a charcoal grill and quickly wipe the grate with a towel soaked in oil. Grill the chicken, turning often, until both the meat beneath the stuffing and the stuffing itself read 165°F (75°C) on a thermometer.
Take the chicken off the grill and let it rest for 7 minutes before serving.
