Tequila Lime Hot Wings swap the usual butter-heavy buffalo coating for a sharp, boozy glaze made from tequila, fresh lime juice and hot sauce. Boiling the mixture down by a third cooks off the raw alcohol and concentrates the citrus into something that clings to the wings. The fried wings stay crisp underneath, and the tang cuts through the richness. It suits game days and casual gatherings, and the sauce takes minutes.

Instructions

Season the wingettes on all sides with salt and black pepper.

Heat the frying oil to 350°F. Fry the wings in batches for 12 minutes each, so the oil stays hot and the skin crisps evenly.

Lift the cooked wings out and drain them on a rack rather than paper towels, which keeps the underside from steaming and going soft.

Pour the tequila, lime juice and hot sauce into a saucepan and boil over high heat. Keep it going until the liquid has reduced by one third and looks slightly thickened.

Toss the drained wings in the reduced sauce until they are evenly coated, and serve while still warm.
