Wali wa junde na karoti is a Tanzanian rice dish cooked with peas and carrots, and it is eaten across East Africa. The rice simmers in coconut milk thinned with hot water, which gives the grains a soft, faintly sweet richness. Turmeric colors the pot a warm gold. Because the seasoning is gentle, it sits happily beside curries, stews, or a simple light meal, and it needs only 30 minutes.

Instructions

Warm the olive oil in a pot over medium heat.

Add the rice, carrots, peas, turmeric and salt. Stir for a few minutes so the rice is coated in oil and the turmeric turns everything yellow.

Mix the coconut milk with some hot water in a separate container. Pour a small amount into the pot and bring it to a boil.

Lower the heat and let the rice simmer, stirring in more of the diluted coconut milk whenever the pot looks dry. Keep going until the rice is tender and has absorbed all the liquid.

Fluff the rice with a fork and serve it hot.
